ANZAC Biscuits - 1926 Recipe

 Anzac Day is a national day of remembrance in AustraliaNew Zealand and Tonga that broadly commemorates all Australians and New Zealanders "who served and died in all wars, conflicts, and peacekeeping operations" and "the contribution and suffering of all those who have served". Observed on 25 April each year, Anzac Day was originally devised to honour the members of the Australian and New Zealand Army Corps (ANZAC) who served in the Gallipoli campaign, their first engagement in the First World War (1914–1918).


The Anzac biscuit is a sweet biscuit, popular in Australia and New Zealand, made using rolled oats, flour, sugar, butter (or margarine), golden syrup, baking soda, boiling water and optionally desiccated coconut.  Anzac biscuits have long been associated with the Australian and New Zealand Army Corps (ANZAC) established in World War I.

It is thought that these biscuits were sent by wives and women's groups to soldiers abroad because the ingredients do not spoil easily and the biscuits kept well during naval transportation.

Anzac biscuits should not be confused with hardtack, which was nicknamed "ANZAC wafers" in Australia and New Zealand.

Anzac biscuits are an explicit exemption to an Australian ban on commercial goods that use the term "Anzac", so long as they are sold as "biscuits" and not "cookies".

SUGAR 1/2 CUP

BAKING SODA 1 TEASPOON

ROLLED OATS (OR FROSTED FLAKES...OR WHATEVER) 2 CUPS

CRUSHED PECANS 1/3 CUP

SHREDED COCONUT (OPTIONAL)

BUTTER MELTED 1/2 CUP -- FULL STICK

Dry Mix

1 CUPS FLOUR

1/2 CUP SUGAR

1/3 CUP CRUSHED PECANS

2 CUPS ROLLED OATS ( HERE YOU CAN SUBSTITUTE, I HAVE TRIED THE ROLLED OATS & FROSTED FLAKES SO FAR -- BOTH AMAZING )

MIX COMPLETELY

Dough Mix

Mix 1 TABLESPOON GOLDEN SYRUP (Lyles Golden Syrup Amazon)

2 TABLESPOONS WATER

BRING TO SIMMER

ADD 1 TEASPOON BAKING SODA

WHISK BRIEFLY UNTIL FROTHED

-REMOVE HEAT-

ADD 1/2 CUP / 1 FULL STICK MELTED BUTTER

MIX

Cookies

ADD DOUGH MIX TO DRY MIX

MIX UNTIL YOU HAVE A NICE DOUGH MIX, NO FLOUR SHOWING

MAKE COOKIE BALLS PLACE ON A COOKIE SHEET / PARCHMENT PAPER & FLATTEN WITH FORK

Baking
